Preparing poached eggs is simplicity itself: bring water to the boil, add a dash of
vinegar. Crack the eggs into a saucer and slide them into the water as gently as possible,
holding the saucer immediately above the surface. If you just crack the eggs into the
water, they're liable to form strings.
Once the water is coming back to the boil again, turn down the heat to the minimum. Cook
for a total of 3 minutes for soft yolks.
